If you've been following me for awhile now its no secret to you that my family loves breakfast. It is absolutely our favorite meal of the day and our favorite breakfast food by far is pancakes. There are just so many ways you can make a great pancake, but my one rule is that a good pancake will never ever come from a mix...until now! You see, if that pancake mix is homemade then the pancake that comes from that mix is still homemade & in turn absolutely delicious!
Several months ago I stumbled upon a recipe for Oatmeal Pancake's on Pinterest. I knew I would have to try them at some point but I just kept forgetting they were there on my board. Well last week one morning I had intentions of making french toast for breakfast but I woke up to find that my hubs had taken all of our bread with him to work, so it was time to come up with another plan and it was decided that these would be made! So you can thank my hubs for this recipe, because I am pretty sure you will love it!
The original recipe comes from Mel's Kitchen Cafe and I kept pretty much everything the same, but I will list the changes I made.
Oatmeal Pancake Mix:
3 1/2 cups rolled oats
3 cups whole wheat flour
2 cups all purpose flour
3 T sugar
3 T baking powder
1 T salt
1 T baking soda
1 cup vegetable or canola oil (I used coconut oil)
1. Mix all the dry ingredients together in a mixer with a paddle or by hand (I chose to do it by hand). If desired you can grind the oats for a smoother texture (I did not do this). Slowly mix the oil in , once its all mixed in pick up a handful of the batter and squeeze it, if it sticks together its just right! :) If not just add a little more oil, mine was perfect though. Then you can store this on your kitchen counter for up to 2 weeks or in the fridge for longer.
2. When you want to make the pancakes....take 1 cup of mix and 1/2 to 1 cup buttermilk (depending on how thick you want it) and 1 egg. Whisk together and then cook up on your griddle like you would any other pancake. I used 1/2 cup of plain greek yogurt & 1/2 cup milk instead of the buttermilk.
These pancakes are fabulous! Possibly my new favorite. The kiddos loved it too, my oldest ate 4 pancakes, my middle child ate 3, baby girl had 1/2 of one leaving me 1 1/2. It was heavenly though!!
We actually enjoyed them so much that I decided to make them again the following morning which was a Saturday when the hubs could enjoy them with us. I invited my parents over for breakfast as well. Again they were a hit among all of us! My mom even asked for the recipe. I also topped these with fresh berries and maple syrup.
I love that I can have this stored on my kitchen counter and super easily whip up a batch of pancakes while keeping it healthy and natural for my family.

These look cry yummy and I love that its a homemade mix that I could make a lot ahead of time, and then only use what I need when I want pancakes!
